What we are really talking about is how flavor note area impacted by aggressive shaking of a cocktail. There are three flavor notes that can be impacted from shaking: high notes (top notes), middle notes, and low notes (base notes).
The most volatile note? The top notes. Shaking your gin makes it taste more like vodka (which has primarily base notes).
