Today we’ll show you how to make the Bijou Cocktail — also known as “Dan learn’s how to stir a cocktail.” This is an old pre-prohibition cocktail recipe and we make it twice: The classic and the Dale Degroff version. Which do you like better?

The Bijou Cocktail is an old recipe that was nearly lost to time until Dale Degroff found it in 1900 Harry Johnson’s Bartenders Manual. After rediscovering it he rebalanced it to give the drink a more approachable taste.
We make both, we try both, we judge both. And, in the end, the classic was just a bit more interesting with Dale’s being a bit thinner and “watered down” — although it was only watered down with additional gin.
Both bijou cocktail variations are going to bring some serious heat to your palate because it’s an all spirit cocktail recipe. But, a good drink recipe is a good drink recipe and the Bijou fits the mold of a classic reborn.
We’re surprised it didn’t make history like the old fashioned and martini.
The Bijou Cocktail
– 1½ oz gin
– ½ oz Green Chartreuse
– ½ oz Sweet Vermouth
– 1 Dashes Orange Bitters
– Cherry or Olive for Garnish
