Today we review HKB or Hong-Kong Baijiu, a spirit created as an entry point for us Westerners to develop a taste for Baijiu. This modern spirit is aged up to 2 years before blending in China, has a pineapple like aroma that fills the room and some curious tastes to go along with it.
It’s clear, it’s fruity and has an attractive aroma to it, everything you want in a nice clean spirit to build a cocktail. Of course, you could just drink it straight!
What is Baijiu? Well, Wikipedia has a pretty clear definition that’s easy to wrap your mind around: Also known as shaojiu or archaically as sorghum wine, is a Chinese alcoholic beverage made from grains. Báijiǔ literally translated means white alcohol or liquor, and is a strong distilled spirit, generally between 40 and 60% alcohol by volume (ABV).
Perhaps, in our tastings we’re a bit tossed off by the sorghum as it’s not something we traditionally have here in the U.S. In some ways, this spirit gives us a bit of a rice / sake taste profile to it, but the pineapple fruit flavor of HKB was very distinct.
