Lets make some clear ice cubes so our cocktails look a thousand times better. We take the top-down freezing method with a small ice cooler (open lid) and freeze the water for 22 to 26 hours.

You’ll want to stop the freezing process before the entire cooler is frozen solid, because then you’ve just made a big old ice cube. The best way we found to halt the method was to set a reminder in our calendar so we could catch it before the water completely froze.
The cutting is the easiest part, you’ll need a bread knife and a rubber mallet. A few things to keep in mind is to temper your ice, leave it out for ten minutes to get it out of the cooler and leave it out for ten minutes when you re-freeze the ice to use later.
Get a ziplock freezer bag to store the ice, keep it from evaporating and starting to take on the scent of the freezer. Then you can pull the bag out and leave it on the table for ten minutes to temper.
