The Zombie Cocktail | Tiki Month – Bonus Simplified Version

Today we’re going to show you how to make The Zombie, a tiki cocktail with a mysterious background. We will also create the Simplified Zombie created by Jeff Berry for those that don’t have all the ingredients. We taste both.

The Zombie has a few secret ingredients that makes the 1934 tiki drink complete. You’ll need Lemon Hart 151 which can be a tough one to get, but should be more available now than it used to be a few years ago (when they halted production). The second secret ingredient is Don’s Mix, which is Spices Number 4 — aka Cinnamon Simple Syrup as well as grapefruit juice (2 juice to 1 cinnamon simple).

Here is the breakdown for the original zombie drink:

The Zombie (1934)
¾ oz fresh lime juice
½ oz Don’s mix (2 oz grapefruit to 1 oz cinnamon simple)
½ oz falernum
1 ½ oz gold Puerto Rican rum
1 ½ oz aged Jamaican rum
1 oz 151-proof Lemon Hart Demerara rum
Dash Angostura bitters
6 drops (1/8 teaspoon) Pernod
Teaspoon grenadine

It’s pretty strong, a brutal little tiki cocktail that brings some traditional tiki curiosity flavors of allspice, clove, and brown sugar but is clobbered with potency, rum bite and an off-dry finish.

Alternatively, the simplified zombie highlights just the core flavors:

The Zombie (Simplified)
¾ oz fresh lime juice
1 oz. grapefruit juice
½ oz cinnamon simple syrup
½ oz 151 proof amber rum
1 oz Dark Jamaican Rum

This recipe has a mild rum, a light introduction of cinnamon sweet and a finishing sour, more like a standard classic cocktail offering. The simplified zombie is much more approachable on flavor profile, but loses some of the dangerous potent finishings left behind from the 1934 zombie.
