The Test Pilot focuses on the perfect balance of tiki design — not too sour, not too sweet with just the right amount of approachable flavor. The Test Pilot is a fantastic cocktail to highlight your favorite Jamaican Rum. Cut with just a bit of Puerto Rican rum, you’ll get plenty of Jamaican funk.
The Test Pilot
– 1/2 oz Fresh Lime Juice
– 1/2 oz Falernum
– 1/2 oz Cointreau
– 1 1/2 oz Dark Jamaican Rum
– 3/4 oz Light Puerto Rican Rum
– Dash of Angostura
– 6 Drops Pernod / Absinthe
The Test Pilot goes by other names as well, as it was stolen (in spirit anyway) by other restaurants. You can find this by the name of the Jet Pilot, Astronaut, Space Pilot and probably a few others. You’ll find Trader Vic has his own spin on the Test Pilot as well, not just the inventory Donn The Beachcomber.
