Egg whites add a smooth mouth feel, which brings a soothing thickness like a milkshake while creating a fantastic foam. Egg Whites scare people, however, salmonella is a bacteria you’ll find in uncooked fresh eggs. If you use pasteurized eggs, the egg white will be bacteria free. It’s always good to wash your hands, however, as you can have salmonella on the outside of the shell from other eggs at the market.
