As far as American/British pale ales go, my favorites (if we’re including IPAs) are probably DFH 60min, Yards IPA, Yards Philadelphia Pale Ale, and recently Long Trail Double IPA and Dock Street’s RyePA. Sierra Nevada’s Pale and Torpedo Extra IPA are definitely some of my go-to’s, too. I definitely agree that everyone just seems to be pumping out IPAs left and right, but some of them are really fantastic.
Also, you’re not supposed to age IPAs because the hop profile really disappears over just a short amount of times. I really try to stay away from old PA/IPAs. For example, I had a six pack of DFH Shelter Pale Ale. I left one in my fridge for one or two months, and the hop profile was all but gone. It ended up tasting like bad pizza for some reason.
