We use cocktail bitters, in this case angostura bitters:

The two recipes we’re using is the most “classic” we could find against the one we had made in the past which was the IBA (International Bartenders Association) version. The big difference is around the total volume of juice and sweetness against the more classic bubbly version we’re trying for the first time.

The Singapore Sling
– 3/4 oz gin
– 1/4 oz Grand Marnier
– 1/4 oz cherry heering
– 1/4 oz benedictine
– 1 oz pineapple juice
– 1/2 oz fresh lime juice
– 1 dash bitters
– club soda, to top
Garnish: orange slice
Garnish: cherry

If there was a gin cocktail that could fall into the realm of “tiki” it would be the Singapore sling! It has all the right ingredients to the tiki movement all except rum. Strange, we have very few memorable gin based tiki drinks and, even though this was made in another area of the US without influence of Don Beach, it’s still amazing how close it comes to the tiki culture.

Try either of these recipes, you won’t be disappointed. But, you may want to batch ’em up so you don’t have to work so hard each time!
