How To Make The Aperol Spritz / Easy Prosecco Cocktail

The Aperol Spritz is a quick and simple cocktail to build with a bottle of Prosecco, Aperol and a bit of club soda / soda water. It’s light and refreshing yet introduces you to a bit of a bitter finish before jumping into something as complicated or challenging as, say, a Negroni.

Aperol Spritz
– 3 oz Prosecco
– 2 oz Aperol
– 1 oz Soda water
– Orange wheel

Aperol definitely brings that fruit sensation with a mild sweet to the start but ends with a less aggressive bitter bite from some of the bittering herbs used within the recipe. Apparently Aperol is rhubarb based spirit, which itself does lend to sweet bitterness due to its malic acid and oxalic acid, but isn’t as bitter as a lime or a bittering herb like gentian (which we believe is the bittering herb for aperol).

Prosecco is not a sweet bubbly either, so your going to get most of the sweetness from the start of your aperol flavor. Diluted a bit with soda water (or just leave it out if you want) to keep it light and pool side refreshing. Much like a sour, however, that mild bitterness makes you want to keep sipping your Aperol spritz over and over.
