ByeJoe Red and Dragon Fire Review, Baijiu Spirit

One of the benefits of having civilizations spread across the world with unique cultures is having an opportunity to experience some of that culture. Can’t leave the house? Perhaps Byejoe Red and Byejoe Dragon Fire can help you experience parts of another culture–China. Baijiu, a spirit distilled from sorghum is something we have never had a chance to try until now.

The aroma of Byejoe is definitely bringing some of the Saké notes even though it’s not made from distilled rice nor is it “brewed” like a Saké but it still gives some of the aromatic references. While this distilled sorghum does bring that aroma and maybe even a bit of the flavor, it does have a completely different earthy “grass” like flavor profile. Granted, sorghum is a grass and there are plenty of products made from grass-like products (Bison Grass vodka comes to mind) but Byejoe doesn’t taste like any of them.

Yes, you’ll have a bit of a potent punch, not too unlike vodka but with a distracting uniqueness that makes you shake it off and start pondering the flavors. The texture is medium and smooth on the mouth and Byejoe does reflect a nicely distilled product from a mouth feel and crisp finish. Of course, the Dragon Fire bottle brings a lot more interesting taste of both dragon fruit and a finish of moderately spicy chillies.

There are no doubt some cocktail uses for this Baijiu spirit but I do believe it will be tough to build a great cocktail with the Dragon Fire (but I challenge you to do it!) because it has very distinct and complex tastes that may best be enjoyed on ice in a tasting glass. Perhaps a bloody mary cocktail for the Dragon Fire would be a good recipe for such a crazy component.
