Circa 1953. Like almost every tiki drink on the planet, this recipe has gone through mutations over the last 50+ years. This design, by Jeff Berry was taken in the 1970s from a paper tacked to a bulletin board in the break room) is slightly modified to remove artificial sweet & sour mix for fresh fruit.

The Mr. Bali Hai is the design of Bali Hai, research of Jeff Berry and an overall lovely taste. The coffee flavor is great. Coffee flavor, moderately sweet against a dark rum with some pungent funkiness from the Jamaican rum. The perfect combination for tiki, the Mr. Bali Hai is perfect!

Mr. Bali Hai
– 1 1/2 oz Pineapple Juice (unsweetened)
– 1 oz Fresh Lemon Juice
– 1/2 oz Simple Syrup
– 3/4 oz Coffee Brandy
– 1 oz Light Puerto Rican Rum
– 1 1/2 oz. Dark Jamaican Rum
