Designed at the Mai Kai, Ft. Lauderdale FL. The Mai Kai hired a mysterious bartender by the name of Mariano Licudine in 1956, a former bartender at Don the Beachcombers (for 16 years). He created over 48 original recipes for the Mai Kai having learned under Donn Beach. This cocktail was no doubt Mariano’s invention and was sold in a Mai Kai ceramic barrel mug, which they also sold at the gift shop. This recipe was the “Zombie” or “Mai Tai” of the Mai Kai world, their iconic recipe.

It’s said that most of the Mai Kai menu was built from the prototypes that Mariano made while working under Beach. The big difference between a unique cocktail like Barrel O’ Rum vs. a Zombie is the intense punch in the face. While the Barrel o’ Rum recipe brings tart passion fruit and molasses rum the zombie brings potent rum blast.

The Barrel O’ Rum is best for those that want to adventure into tiki drinks without having to worry about “can I drink this all?” Tiki Drinks should have flavor, potency and fun. The Mai Kai’s Barrel o’ rum has all!

The Barrel O’ Rum
– 2 oz Light Puerto Rican Rum
– 2 oz Dark Jamaican Rum
– 2 oz Passion Fruit Syrup
– 2 oz. Fresh Lime Juice
– 2 oz. Fresh Orange Juice
– 2 oz. Fresh Grapefruit Juice
– 1 barspoon Honey syrup
– 6 dashes Angostura bitters
– 1/2 oz Club Soda
